Show Mommy How The Piggies Eat

I had a bunch of random ingredients in my fridge that had to be used tonight.   I made a low fat pork fried rice last night so I didn’t want to do beef or pork tonight.   That left me with chicken or fish.   I always keep ground chicken stocked in my freezer so chicken it is.

I went the meatloaf route.   It’s an easy go to meal with little prep work.  More importantly, my random ingredients would mesh well together this way.

Chicken Meatloaf

1 pound ground chicken

1 medium vidalia onion, chopped

8 oz oyster mushrooms, chopped

1 zucchini, chopped

7 oz fresh mozzarella cheese, cut into small bite size pieces

2-3 cloves garlic, chopped

1 TBSPN dijon mustard

2 TBSPN Henri Hutin horseradish cheese

2 TBSPN zip sauce

1 TBSPN worcestershire sauce

2 TBSPN granulated garlic

2 TBSPN onion powder

Sea salt and hot shot, to taste

1 egg

1/4 cup of Italian breadcrumbs (or panko, you choose)

2 TBSPN butter

In a large saute pan, melt the butter and toss in the onions and mushrooms.   Cook until onions begin to caramelize.   When they are almost caramelized add in the zucchini and garlic and continue to cook for a few minutes.   Then stir in the dijon, horseradish cheese, zip sauce, worcestershire sauce, granulated garlic, onion powder, salt and pepper.  Cook for an additional minute, remove from heat, and set aside to cool.

In a large mixing bowl, mix together the ground chicken with the fresh mozzarella, the egg, the breadcrumbs, and the cooled off veggie mixture.

You could either free form on a cookie sheet and bake that way or put into a loaf pan and bake.  Bake in the oven at 350 degrees for about 1 hour.

Every meatloaf should have a good sauce.  Since this is not your typical meatloaf, I’m not going to give you a typical sauce.

Mascarpone Marsala Cream Sauce

5-6 oz mascarpone cheese

2 TBSPN Henri Hutin horseradish cheese

1/4 cup marsala wine

3 TBSPN unsweetened apple sauce

1 and 1/4 TSPN ground mustard

1 TBSPN butter

Salt and pepper to taste

In a small saucepan, combine all ingredients and cook over a low heat until butter is melted and cheese melted and smooth.   Spoon over meatloaf slices before serving.
